Ingredients:
Chicken, Beef, Turkey Bones*
3 cloves garlic, minced
2 onions chopped
6 whole carrots and any saved peels
6 stalks celery or 2 cups chopped
1T salt
1 bay leaf
2t. apple cider vinegar
Water to fill crock pot or stock pot
Directions:
*This recipe calls for the bones from chicken, beef, or turkey. The more bones the more flavor. For one 8-quart crockpot I use 4 chicken breast bones and 6 chicken legs.
Add bones to crock pot (if some meat or skin is still on the bone add it).
Add vegetables, salt, apple cider vinegar, and bay leaf.
Fill crock pot just below the rim, leaving approximately 1/4 in space.
Secure lid and turn heat to low.
Let cook for 24 hours.
NEXT DAY:
Using a fine strainer and a large pot, strain all of the bones, and vegetables, pushing out any excess liquid the vegetables absorbed. Discard the bones and vegetables.
Let liquid cool then place in the refrigerator.
Once the liquid has cooled (6-8 hours) use a spoon to skim off the fat that has risen to the top of the broth. Discard the fat.
Store the broth in the refrigerator for 7-10 days or freeze for 6 months.
